Ingredients 3 cups Long grain white rice de-boned chicken legs and thighs Bora and or veges , carrots etc. 7 stems scallions 1 onion 3 broad leaf thyme (Puddina) 1 wiri wiri pepper (Optional) Chinese sauce 3 drops sesame oilMethod1

SEASON THE CHICKEN
You will first wash and chop the chicken into small pieces.
To season the chicken add the following.
1 Tbsp. garlic crushed
onion, scallion and celery
some chiefs chinese sauce
Mix well and set aside2

PREPARING THE FRIED RICE
Heat about 3 Tbsps oil in a pan, wash rice and add to pan
Add salt to taste and 3 drops sesame oil
parch rice for about 3 minutes, it will become loose
after add 6 cups water ( 2-1 water to rice )
In about 15-20 minutes water will evaporate and rice should be fully
boiled but firm, if there are still grains add a little water.
After let rice stand preferably in a wide container to air cool3

The Chicken
On medium heat
Heat some oil in a pan, add the chicken
cook chicken for about 10 minutes
after chicken has cooked for around 10 minutes
add chopped vegetables, scallions and onions,
cook for 2 more minutes
Now add the rice, some fried rice seasoning
and black pepper to taste.
Mix well, adjust any seasonings and salt.
